Frequently asked questions.

How do I pre-order?

Once we launch, you can use our online store to submit your order. Pre-ordering will close at noon (12:00 PM) the day prior to Catch Day (Monday for Tuesday pickup, Thursday for Friday pickup). Orders are filled in the order in which they are received.

Do I have to pre-order or can I come in person?

We strongly encourage pre-ordering to guarantee your items. However, we will accept walk-up customers on a first-come, first-served basis as supply allows. Please check our social media for availability updates or give us a call ahead of time.

Can I choose a specific pickup date?

Yes, when ordering, you will have the option to choose your desired pickup date (and location) at checkout. We will post updates and reminders for when orders are open / closed.

How will I know how much my lobster(s) weigh?

We sort our lobsters into weight categories.

  • Deckhand: 1.25 - 1.49 lb

  • Captain’s Catch: 1.5 - 1.99 lb

  • Harbor Master: 2 lb+, limited availability

Final, exact weight and price will be determined at pick up.

What is the ideal serving size for lobster (e.g., how many pounds per person)?

For a main course, we recommend planning for:

  • 1.25 to 1.5 pounds of live lobster per adult.

  • If you are buying meat, plan on 4 to 6 ounces of picked meat per person.

Where does your lobster/seafood come from?

We fish the rich, nutrient-filled waters off the coasts of Hampton, Seabrook, and Portsmouth.

How do you ensure the freshness and quality of your lobster and seafood?

We fish based on your demand the morning of pickup. Stock is humanely held in an aerated holding tank (cycled ocean water) until we return to the dock. From there, our lobsters are safely transferred to holding cages directly in the ocean water. To reduce stress and injury, we avoid overcrowding. When you arrive, our staff will hand-retrieve your order, weigh, and package it to ensure minimal time out of the water.

How is your seafood sustainable?

Sustainability is fundamental to our operation, which is why we:

  • Know Our Quota/Season: We strictly adhere to all local, state, and regional catch limits (quotas) and seasonal closures, especially during spawning seasons.

  • Only Target Healthy Stocks: We use external guides and local agency reports to ensure the species we target are not overfished or in decline.

  • Use Low-Impact Gear: We prioritize gear that is highly species-selective and minimizes habitat damage, such as hand-caught or pole-and-line fishing, which virtually eliminates bycatch (non-target species) and habitat destruction.

How should I store live lobsters, and for how long, after I pick them up?

Live lobsters must be kept cold, damp, and allowed to breathe.

  • Do not place them in fresh water—it will kill them.

  • Store them in your refrigerator, ideally in the coldest section (like a crisper drawer), covered with a damp cloth or newspaper.

  • Keep them in the original bag or an open-air box; do not seal them in an airtight container.

  • For best quality and safety, cook the lobsters the same day you pick them up. If necessary, you can store healthy, hard-shell lobsters for 24-48 hours.

What is the best way to store fresh fish fillets, and for how long?

For optimal freshness, keep your fish as cold as possible.

  • Remove the fillet from the packaging, rinse it with cold water, and pat it dry with a paper towel.

  • Wrap it tightly in parchment paper or place it in an airtight plastic bag.

  • Place the wrapped fish on a bed of ice in a shallow container in the coldest part of your refrigerator.

  • The fish should be cooked within 1-2 days of pickup.

Can I freeze my fresh seafood, and what is the best way to do so?

Yes, you can! Freezing is a great option for longer storage.

  • The key is to minimize air contact to prevent freezer burn.

  • For fillets, wrap them tightly in plastic wrap or freezer paper, then place the wrapped package inside a zip-top freezer bag, pressing out as much air as possible.

  • Ideally, use a vacuum sealer if you have one.

  • Properly frozen seafood can maintain quality for 3-6 months.

Do you provide cooking instructions?

We provide basic storage and handling instructions with each order. A variety of in-depth recipes and cooking techniques can be found on our online blog posts.

What is the best way to cook lobster (steaming vs. boiling)? How long does it take?

The most common way to cook lobster is by steaming or boiling. Steaming is often preferred as it preserves more flavor. The cooking time depends on the lobster's weight, but a good rule of thumb is:

  • Boiling/Steaming Time: Approximately 7 minutes per pound for the first pound, then 3 additional minutes per extra pound. Example: A 1.5 lb. lobster would cook for about 7+1.5=8.5 minutes.

Lobster is done when the shell is bright red and the meat is opaque white.

Do you sell pre-cooked or prepared items (e.g., lobster meat, chowder)?

  • At this time, we are not offering pre-cooked lobsters or prepared lobster and seafood products due to licensing and regulations. Please stay tuned for partnerships and collaborations with other local businesses!

What forms of payment do you accept?

We accept all major credit/debit cards, cash, Venmo, and checks. Final, exact pricing will be determined at pickup due to varying weight of product.
